Taj Mahal, New Delhi, has prepared an in-room BRICS menu featuring nalli nihari, regional savouries, mithais and a culinary map of India.
Nalli nihari, pepper fry with almonds and a map of India made with regional savouries are part of the in-room food programme planned for BRICS delegates at Taj Mahal, New Delhi.
Executive Chef Kaushik Misra said the hotel created an ‘India Friendship Menu’ for the September 12–13 summit. The menu combines dishes associated with Delhi and other parts of India with selections based on the hotel’s research into delegates’ preferences.
“We have done a lot of studies on what each and everyone's likes and dislikes are,” Misra said, adding that the team spent between three and six months on the exercise.
The hotel has used lotus and orchid references in pralines, mithais and savouries. Its culinary map is organised around Indian states and capitals, using local savouries to represent regional food traditions.
Delegates will receive a concept note explaining the ingredients and preparations, along with a recipe book of chef-curated recipes.
