The ODOC Pavilion at India Expo Centre and Mart in Greater Noida is demonstrating Uttar Pradesh dishes, including Mirzapur jaggery thekua.
Mirzapur jaggery is being used to make thekua at the ODOC Pavilion at Greater Noida’s India Expo Centre and Mart, where visitors to the UP International Trade Show can watch a Purvanchal-style version of the snack being prepared.
The pavilion presents dishes and food products from Uttar Pradesh’s 75 districts through stalls, cooking demonstrations and its Khau Gali food area. Its Master Chef Class explains how thekua is prepared while introducing visitors to Mirzapur jaggery and other products associated with Purvanchal.
Visitors can ask culinary experts about the dishes, their districts and the local traditions behind them. The Khau Gali has also drawn visitors during the day, with some stalls running short of products.
Chef Harpal Singh Sokhi is scheduled to join the ODOC Master Chef Class on Sunday to discuss combining Uttar Pradesh’s traditional food products and dishes with modern culinary techniques. The pavilion is part of the Uttar Pradesh government’s One District One Cuisine initiative at the trade show.
