Chef Ashwin Singh has opened Fitour, a 14-seat tasting-menu restaurant inside House of Akina in Bandra, serving an 18-course meal in a sequence of “verses”.
Singh, who has worked at Masque in Mumbai and Gaggan in Bangkok, built the menu around childhood food memories, North Indian hospitality and Indian dishes recast in unexpected forms. Diners do not receive a menu at the start; each course arrives before its ingredients and inspiration are explained.
Dishes include litti chokha with sattu presented as a ginger cookie, mint hot sauce, mustard chokha and chutney; pahadi crab masala with bell pepper, pickled onions and lemon; and strawberry chaat with dehydrated yoghurt, pickled onions and jimikand. A thali course includes butter naan, snap-pea chaas, jungli sauce, and a dehydrated papad salad with muskmelon, cucumber and green apple.
The room is dark on entry, with lighting and music changing through the meal. Fitour currently has 14 seats; Singh said the space could eventually accommodate 22.
